You can’t beat a good scone!! I’m particularly partial to a cheese one – there’s something so lovely about their soft warm cheesiness dripping with butter!
This is a very straightforward recipe but with the addition of a lovely herby mixture that just adds a top note to the flavour. My favourite is a pizza herb mix which I buy from the health food stall on our local market. As well as a mix of herbs it contains sesame seeds and garlic – yum! I’ve also added some whole meal self raising flour to make them just a little bit healthy.
Ingredients
8oz self raising flour
4 oz wholemeal self raising flour
3oz butter/margarine
1 egg
Pinch of salt and a twist of black pepper
Milk to bind
4oz strong cheddar
Tea spoon of pizza herb mix or mixed herbs
Grated Parmesan cheese and a chilli powder
Method
Rub the butter/margarine into the flour until it resembles course breadcrumbs. Add the cheese, herbs and seasoning. Lightly beat the egg and add to the mixture then with a fork and add enough milk to form a stiff dough. Form the dough into a ball and roll out to about an inch thick. Cut with a round pastry butter and place on a greased tray. Brush with milk and sprinkle with the Parmesan and a little chilli power. Back in a pre heated oven at 180 degrees until golden brown. Serve warm with butter.
