Advent Blog: 4th December – Winter warming soup

Today has been very cold and when you sit at a desk in an old house with out much heating you need a bit of warming up! Cue a visit to the fridge to gather up all the slightly tired looking veggies to turn them into a lovely soup. This is my homemade minestrone.  To make you simply  you chop everything up, fry it off with a bit of olive oil, add stock, herbs, a tin of cannellini beans and tomatoes and voila a lovely economical winter warmer! Garnish with fresh basil, parmesan and dried chillis because they are lovely and are good for the photos!
